Easy White

[Duffbeer]

A real easy white, drinkable in a couple of months.
1 UK Gal
3tlrs white grape juice (1 reserved for top up)
1tlr apple juice
1ltr Tropical juice
1 tsp gp yeast
1 tsp nutrient
1 tsp pectolase
Sugar to sg 1.080

all in primary for 4 to 6 days, then tranfer to secondary under airlock, leave to ferment out topping with reserve white grape juice after racking. Nice to drink after a few months in the bottle, though will improve

If you are using only juice and no fruit pulp, why do you start in the primary?

To allow for foaming and oxigen to the yeast, but bear in mind I was a 3 month novice winemaker when I posted this, saying that it did turn out nice.

So in hindsight Duff, would you still recommend starting in a bucket and not a DJ?
Sounds a good one, think i`ll try it!

It will work perfectly fine started in a bucket or a d/j, the advantage of the bucket is that you don't have to worry about foaming and overflow, you can also make just over the gallon and save the excess in a small bottle for topping up.

One more thing Duff, i noticed the recipe has concentrate or rasins/sultanas. Is it not thin?
Sorry if you think i`m being cheeky just most recipes i`ve looked at they usually have one.

Make the wine up according to the recipe. The grape juice does away with the need to add sultanas/raisins and will give you a fresher flavoured earlier drinking wine. I bet you have been looking at some old recipes.

It contains both grape and apple juice, both of which give sufficient body.

Some of the old recipes are ok but the sugar addition rates could be way too much. Use your hydrometer to obtain the starting sg that you require and you will be fine.
